Do you know of a flowcharting software package I could use to analyze a large 8051 project I just inherited?

Yes. There are a number of packages that can do that.

One is from Siemens Austria (not Australia). Is is a product called EasyCase. With this tool, you can analyze your existing source code. Flowcharts are also possible with this tool. Check out their web-site for more details:
