Is there a product that performs reverse C compilations given an Intel Hex file?

No. There is no automated way to convert HEX code back into the C code.

Even if there was, it wouldn't be all that useful. For one thing, variable names and function names would have to be called A0001, A0002, A0003, and so on (since the original names are not written into the HEX file).

There are numerous software developers who can help reverse engineer a project back into assembler and maybe even C code. However, this is likely to be a very expensive pursuit.
